Potato Boats



1 cup water
1 Tbsp butter or margarine
1/4 cup evaporated milk
1 Tbsp minced onion
salt and pepper to taste
1 1/3 cups instant potato flakes
1/2 cup shredded cheddar cheese

Shape 4 rectangles of heavy cooking foil into boat shapes for each potato boat.  Double foil for stability and turn over the top edge.


Bring the cup of water to a boil and then pour into a bowl.  Add the butter, evaporated milk, minced onion, salt and pepper.  Blend and the add the potato flakes and stir until just moistened.  Let stand 5 minutes.


Preheat oven to 400F.


Stir the potatoes gently with a ford and then spoon into the foil boats.  Top with cheese and garnish of your choice.  Place on a baking sheet and cook in a preheated oven for 5 minutes at 400F  or until cheese is melted.
