Mexican Rice Recipe



1 cup spicy V-8 Juice + 1/2 cup water
1/2 cup minced onion or 2 Tbsp reconstituted chopped onions *
1/2 cup minced bell pepper (green /or red) or reconstituted pepper dices *
1 Tbsp olive oil
3/4 tsp iodized salt
1 tsp chili powder
1/4 cup salsa (your favorite brand)
1 1/2 cup instant white rice




Combine all ingredients (except for rice) in saucepan and bring to a boil. Stir in instant rice, cover and remove from heat. Let sit 7 or 8 minutes, stir, and serve. Top with a little shredded cheese if desired.


Reconstitute before using.  Follow directions on #10 can to reconstitute.
